Strawberry Shortcake Seven Ways

Strawberry shortcake is our absolute favorite summer dessert around here. My kids are addicted to strawberries, and when they are in season, we can’t help but buy them in bulk. Last weekend we made homemade biscuits to throw together a super yummy shortcake, and it did not disappoint! Topped with vanilla frozen yogurt, whipped cream, sliced strawberries in homemade syrup & probably too much powdered sugar. If there is such a thing. 
I am rounding up seven of my favorite recipes for strawberry shortcake today, and thinking it wouldn’t be a bad idea to try them all before summer is over! 😉
1. Grilled Strawberry Shortcake Donuts // This totally counts as breakfast right?
2. Strawberry Shortcake Ice Cream Sandwiches // I love these all tied up with bakers twine, so pretty for entertaining or birthday parties!
3. Strawberry Shortcake Overnight Oats // Overnight oats are so easy & make for such a good way to switch up breakfasts, especially for kids.
4. Strawberry Shortcake Kabobs // Perfect for entertaining, all food is more fun on a stick!
5. No-Bake Strawberry Icebox Cake // So easy & pretty. And perfect for kids that love graham crackers as much as mine do!
6. Homemade Strawberry Shortcake Popsicles // Another one the kids would love to eat, but also would have so much fun making.
7. Vegan Strawberry Shortbread Ice Cream // Only takes 15 minutes? Count me in!

    My favorite still to this day– after I think almost 10 years of trying it different ways is make pate choux (it is the pastry that eclairs are usually made with. I use Martha Stewart's recipe, pretty easy to make!) After those have gotten to room temperature, split in half like a hamburger, remove any "breading" inside, add vanilla pudding (made to the pie filling instructions on the box), and strawberries, top with homemade whip cream, add more strawberries, and top with the other half. Soooooooo good! We love strawberry shortcake around here too! Also if you have vanilla cake, we like to do almost parfaits with them, cake, strawberries, whip cream, some type of vanilla filling, etc. Always a hit with the smaller tummies too!

    Yes! Strawberry desserts are the epitome of summer for me! As I kid I was always completely content with a giant bowl of strawberries that has been drowned in sugar and refrigerated overnight, thus swimming in strawberry syrupy goodness.
    But I also loved them (and still do!) simply dipped in whipped cream or served in a pie or with shortcake. I'm a little disappointed that my littles don't seem overly enthused about strawberries yet but I'll make strawberry lovers out of them yet!

    Ohmygoodness! Oh, how I love strawberry shortcake! My favorite recipe comes from the childrens book Cook-a-doodle-doo! By Janet Stevens and Susan Stevens Crummel. Adorable story and perfect recipe in the back of the book.

    I swear we might share the same brain sometimes. I had the biggest craving for strawberry shortcake over the weekend, so we made some last night! It turned out great! I used a recipe from Food Network, super easy & quick!!

    Oh my goodness this looks incredible! And your presentation is spot on. We are a sucker for desserts around here, so sneaking some fruit in always makes me feel a little better 😉 We are trying a new blueberry crumble recipe tonight, so if it's a winner I'll have to send it your way.
