Six St. Patrick’s Day Snacks

We are excited for some St. Patrick’s Day shenanigans this week, most of which include wearing green & polishing off a box of Lucky Charms. Harper always asks what holiday comes next & at her age, it is especially fun to find ways to make it special. I wanted to try a few fun recipes this year, most of which included these pretty rainbow marshmallows. I emptied a whole box of cereal into a big bowl & let the girls pick out all of the marshmallows to put aside for us to use. I was surprised to get an entire sticky jar full of marshmallows, despite the mess & marshmallow consumption. 🙂

We are going to be making some frozen cereal & milk pops on Thursday, but I just couldn’t resist throwing a handful into our popcorn last night (for the Bachelor finale, who else was watching?! #teamjojo). We have been making popcorn on the stove top lately & it just can’t be beat, I love it with a good drizzle of melted butter & a pinch of sea salt. I’m pretty obsessed with how this turned out, it was the perfect combo of sweet + salty!
 

St. Patrick's Day Snacks
Here are five more St. Patrick’s Day inspired recipes that I am loving, surely my kids would go bananas for each & every one of these.
Lucky Charms French Toast // You had me at marshmallow cream topping.

Rainbow Fruit Pizza // A healthy snack that might just be too pretty to eat.

Lucky Charms Macarons // I think I love the food photography just as much as the actual food here.

Green Pistachio Ice Cream // Homemade ice cream is always irresistible in our house.

Lucky Charms Ice Cream Sandwiches // Except I’m afraid all future snacks would be inferior once my kids tried this.

    I just bought a box of Lucky Charms for some magic bars and I have to say I was little disappointed with how they turned out 🙁 Ill have to try one of these to redeem myself!

    Thank you for sharing these fun recipes! I definitely want to try some with my girls. Have so much going on Thursday not sure I can squeeze it into my schedule but hoping to do it anyway, even if on the weekend. Because St. Patty's day doesn't just have to be a one day celebration, right? 😉 oh and my favorite thing about this post, I found out I can order cereal marshmallow in bulk, get out!! So excited haha.

    Jess, these recipes all look fantastic. Especially the pistachio one! I can imagine a little toss in of mini chocolate chips would be a nice addition, too. I also love the fruit pizza, as my son loves pizza these days. Thanks for the info! Hopefully hard cider, corned beef and cabbage will be the menu this year. And now adding the pistachio ice cream, too. 🙂

    I love your blog – always so creative! Your girls are adorable and I look forward to reading each week. Plus, we share the love for Hocus Pocus and holidays! 🙂 I was #teamjojo for the Bachelor finale…I felt so sad for her and thought Ben was dumb for NOT marrying his best friend.

    If Harper always asks "what comes next," you should absolutely get the book Over and Over by Charlotte Zolotow. If you haven't read it, the book goes through all of the holidays in a year, and the little girl always asks, "What comes next?" It's completely precious, and the illustrations are classic and beautiful.

    If you're on a popcorn kick, make sure you make it with butter & Tony Chachere's cajun seasoning. It might make you cough a little bit, but it's delicious.

    At 39 weeks pregnant, I am so glad that I didnt know about the recipe for the lucky charms ice cream sandwiches until now! That could have been disasterous! 🙂

Easter 2023 🐰 Would like to point out that I di Easter 2023 🐰 Would like to point out that I didn’t find them any cute matching pajamas this year but they took it upon themselves to find some in their closets & dressed accordingly. They also surprised US with an Easter egg hunt around the house with recycled Easter eggs filled with hand written notes and coupons to cash in for hugs, compliments, etc. How did we get here?! The girls could hardly sleep Saturday night bursting with excitement to host our friends & neighbors for donuts in the morning, they were up before the sun ready to start setting the tables & rolling dough. For everyone reading this with babies & toddlers, just know that all of those sweet traditions you are creating will make a home in their hearts, and one day they’ll be the ones making the magic for you. 🤍🤍🤍

Did your grandma ever make you a jello poke cake?! Did your grandma ever make you a jello poke cake?! They’re so fluffy and refreshing!! And always our girls birthday cake request! It’s too easy: make a white cake (from a box), poke holes in it with a toothpick, make jello according to directions in a saucepan and pour over top, and then put in the fridge for 3-5 hours to cool and set! Frost with whipped cream and serve chilled!!
