And just for fun, I thought I would share a favorite recipe that is perfect for Mother’s Day brunch (or breakfast in bed!), French toast with blueberry compote. Making it in this pan specifically is insanely easy, I made a simple French toast using brioche bread, and top with this amazingly delicious blueberry compote:
2 cups fresh blueberries
½ cup of water
¼ cup of sugar
Juice from half a lemon
Simple recipe: on medium heat, add all ingredients to your pan, bring to a boil and then let it simmer with the lid on for 3-5 minutes. Take the lid off, stir often until it starts to thicken (about 3-5 more minutes) and serve on top of French toast!
